Chicken Fried Rice
3/4 teaspoon of sesame oil
1 medium onion, diced
14 ounces cubed, cooked chicken meat
1 tablespoons and ½ teaspoon of soy sauce
1 1/4 large carrots, diced
1 large red bell pepper, diced
1/4 cup and 3 tablespoons fresh pea pods, cut in half
3 1/2 cups cooked white rice
1 1/4 eggs, scrambled
3 tablespoons and ¼ teaspoon of soy sauce
In a large skillet, heat the oil over medium heat. Add the onion to the oil and saute it until it is soft. Add the chicken to the oil and then the first amount of soy sauce. Stir fry this mixture for about 5 to 6 minutes.
Add the vegetables to the chicken mixture and stir fry the chicken and vegetables for another 5 minutes. Add the rice to this mixture and mix thoroughly. Add the scrambled eggs to the chicken and vegetables along with the remaining soy sauce. Heat the entire combination and then serve while it is hot.
