Fall is here, and that means it’s time to pull the pumpkin recipes out!
I love all things pumpkin, and these Pumpkin Spice Cookies with Cinnamon Icing are quick and easy to make. Plus, when these are baking in the oven, the house smells amazing!
- 1 Spice Cake Mix
- 1/2 Can of Pumpkin (15 oz can)
- 1 Egg
- 1/2 Stick Butter softened
Simple Icing
- 1 cup Powdered Sugar
- 2 tbsp Milk
- 1 tsp Cinnamon
Directions
1. Preheat your oven to 350 degrees
2. Combine cake mix, pumpkin, egg, and butter in a bowl and mix until well blended. I used my stand mixer.
3. Bake for 15-20 minutes.
4. Remove from oven and allow to cool on a wire rack.
5. Make the icing by slowly adding the milk a little at a time to the powdered sugar and mixing well. You want the mixture to be thick enough to stay on the cookie when the top of the cookie is dipped in. Once you have the consistency add the cinnamon.

Just made these, sans frosting – YUM!! Almost muffin-y in texture, I actually put a little extra butter on one – heavenly!
