Fall is approaching and for me, that means getting back into the swing of things with eating better. I let myself go a bit more in the Summer because it is so hot that when I do eat, its nothing good. As I do every year, I look for recipes that I do not have to sacrifice enjoying my favorite meals. One of my favorite things, when I am cooking, is to cook with butter! I mean come on, butter just makes everything better! I found an amazing recipe from Brummel & Brown Spread that tastes just amazing! Brummel & Brown is made with plant-based oils, purified water, and the goodness of real yogurt so it fits into your healthy, fall routine goals! I modified their recipe a bit to make it more to what my kids will eat and it came out outstanding! Take a look:
Garlic Lemon Chicken
Ingredients:
1/4 cup Brummel & Brown Original Spread, melted
2 large cloves garlic, minced
2 tsp. grated lemon peel
1 tsp. dried oregano leaves
1/2 tsp. black pepper
8 Boneless Skinless chicken thighs
2 cups halved medium baby red potatoes, 12 ounces
1 large Carrot
1 Spanish Onion
1 lemon
Directions:
– Preheat oven to 425°.
– Combine Brummel & Brown Spread, garlic, lemon peel, oregano and pepper in small bowl; set aside.
– Arrange chicken, potatoes, and onion on a large baking sheet. Toss with spread mixture and top with lemon wedges.
– Roast chicken and vegetables 40 minutes or until chicken is thoroughly cooked and vegetables are fork-tender. Transfer to serving platter and drizzle with pan juices.
This was a HIT! Everyone loved it and now this is will be a staple in my house. My son actually ranked it 2nd place of his favorite meals. The 1st place winner is his sisters Lasagna lol. I won’t argue with that. To be honest, this is my second time cooking with Brummel & Brown Original Spread but it sure will not be the last.
