Who loves EMPANADAS? Boy I sure do… but I like the SWEET ones (go figure)! My favorite empanadas are Apple Empanadas. And Caramel Apple Empanadas… YES PLEASE!
Here’s a Caramel Apple Empanadas Recipe that will not disappoint! Best part? these are quick and easy to make too – ready in about 20 minutes!
MINI CARAMEL APPLE EMPANADAS
Yields: 8 empanadas
Ready in 20 minutes
Ingredients:
- 1 Granny smith apple, peeled and cut into 8 wedges
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar
- ½ teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Dash of allspice
- ¼ cup caramel sauce
- 1 refrigerated pie crust
- 1 egg, lightly beaten
- Sugar to sprinkle on top
Directions:
1. Preheat oven to 425°F
2. Line cookie sheet with parchment paper.
3. Toss apple with lemon juice.
4. Combine sugar and spices and sprinkle and apples. Toss to coat and set aside.
5. Unroll pie crust on a lightly floured surface.
6. Cut out 8 rounds using a 4 inch cutter.
7. Place pie crust rounds on parchment-lined baking sheet.
8. Place each apple wedge on the rounds – slightly off center to allow room to seal the empanadas.
9. Drizzle 1 teaspoon of caramel onto each apple.
10. Pull edges of pie crust rounds together and seal. Use a fork to crimp edges.
11. Brush the tops of the empanadas with egg and sprinkle with sugar if desired.
12. Bake for 10-12 minutes or until golden brown. Allow to cool slightly.
13. Optional: Drizzle extra caramel sauce on top of empanadas before serving.
